Thank you for such a great product! My kefir grains arrived last week to New Jersey in just two days after placing my order. I was so excited to get started and you shipped fast! I read some other sites selling grains that came in envelopes and plastic baggies so I was relieved to see these packed so well in a nice bottle and sturdy box. The grains did not look “soupy” at all but looked quite fresh and have been fermenting strong since the first batch. Now I already have over a cup of grains! So far I have just been making plain old water kefir but am thinking about experimenting with some recipes. I’ll let you know if I come up with any good recipe ideas. I love your blog. I love the water kefir that I’ve been making with the your tibicos! The first batch was flat and not great tasting. But from my early experience brewing kombucha years ago, I knew to just keep trying it until it came out the way I like. Honestly, I was expecting to not enjoy or maybe not even drink the first few batches. But the second one came out wonderful as have all the rest! I am still brewing kombucha, but I feel that I will be moving more towards water kefir because it is fizzy and yummy with no caffeine. Plus it is easier and faster than kombucha!
I have been doing the first brew for 48 hours adding a few raisins and half a slice of lemon. I then filter the tibicos (I eat the raisins!) and pour the water kefir into a green Pelligrino bottle. I do a second 24-hour ferment (I dont know if this is really a second “ferment”?) where it sits in the dark pantry. Then we drink the whole thing!
My grains have doubled, and right now I am making a batch in a half-gallon bottle. I’ll let you know it goes.

The golden rule is that the tibicos not have a monetary value.
That’s what gives you the true value, must be free. We´ve been taking them for a month now, since then, we have given to many people, without getting anything in return.

I’ve been drinking for 3 months and I love it. My health is much, much better and also my energy and I lose 6 pounds and that is what I needed. What I love the most is that I am eating healthier and not because I trying hard is in a natural way, I don’t want to eat white bread or fried food or sodas, I used to drink 2 liters a day and I don’t drink that much now.
